2005 Cabernet Sauvignon
Sweet red and black fruits, as the mid palate intensity is balanced with silky tannins and controlled French oak.
Cooler climate red berries and chocolate will make for great drinking as a young wine yet greater rewards will result with cellaring up to 7 years.

2005 Merlot
Raspberry and black cherry on the nose give way to cedar and cigar notes with a hint of violets.
As the sweet, red fruit rolls across the tip of the tongue, the lovely, intense red berries, plums and rhubarb are masterfully balanced with the silky tannins that can also be tasted within these layers of flavour.

2004 Merlot
Cherry ripe, dark chocolate and a touch of biscuity aromas. An elegant Merlot with the ripe blackcurrant and fresh earth aromas. Enjoy the rhubarb flavours on the generous palate.If you appreciate Beef Carpaccio you will understand how the fruit and chocolate flavours in the Merlot will work so well but not overpower the ‘freshness’ of the beef with the saltiness of the parmesan and piquancy of the capers. Otherwise try White Rocks veal with some wild mushrooms.

The rich red appearance of this stunning cool climate Shiraz is highlighted by striking bright purple hues, while the white pepper, a touch of spice and some black fruits can be seen on the nose.
With lifted spicy fruit being displayed on the palate, this well balanced wine displays sweet, perfumed, dark cherry characteristics with some charred cedar and cherry oak carrying through to layers of velvety tannins.

The cool climate nature of this Shiraz allows the red berry flavours to develop with a richness of flavour on the palate that is great fruit, conserve-like and chocolaty.
Just has to go with Amelia Park Dardanup lamb. The peppery and berry fruit flavours will accentuate the delicacy of this superb West Australian ‘icon’ lamb…..must be served pink!

Blackberries, raspberry and sloe berries with a very fine fruitcake complexity. These two varieties have been a match made in heaven. The blend of 55 % Shiraz and 45 % Cabernet Sauvignon elevates this wine.The generosity of ripe berry flavours in this great wine lends itself to some superb marbled Black Wagyu, with its outstanding flavour and tenderness.
